
So it has been a bit since I was posted. It is AP season, more like AP torture. I don’t have problems with taking the exams themselves it’s just that work is building up in all my other classes as well. Oh Well, they’ll be fun times after. I can’t wait to bake again…

Thinking of something to make to end a day filled with strawberry delights, something sweet and warm came to mind….
Baked apples for one
2 tablespoon brown sugar
2 tablespoons applesauce
1 teaspoon maple syrup
1/2 teaspoon ground cinnamon
1 medium sized apple peeled and cut into slices
Preheat oven to 350F. Combine all ingredients except the apple pieces in a small bowl. Place pieces in a shallow pan and pour the mixture over. Bake for 15 minutes. Remove from oven and serve, grinding some more cinnamon over them.

What a better way to start your day than with some delicious crepes? I found a basic recipe for crepes here and I halved it for breakfast for one. While the batter was setting I processed a couple of fresh strawberries with a little agave sweetener and chilled the result until I needed it. When it was time to start making the crepes, I used Earth Balance buttery spread to add to resemble the French dish. After they were done I threw on some of that strawberry sauce and some cut up bananas. The warmth of the crepe combined with the cold and fresh taste of the toppings truly put a jump start on my day.
Surfing around the web some more after breakfast looking for something I could make for lunch, I stumbled upon a muffin that I’ve been meaning to make…
